POSOLE - Aunt Jan's Recipe
New Mexico Hominy Stew

For appx 6-8 people

3-4 cans White Hominy with juice
1 Qt water with chicken or beef stock
1 ½ lbs pork cut in 1" cubes, best to buy boneless pork loins = no fat, get at Costco
1 tsp Oregano
1 Medium white onion, chopped
2-3 cloves of Garlic
3 TBSP Medium New Mexico red chili powder (Start with 2 TBSP)
Salt and pepper to taste

Brown in oil - meat, onion, garlic.
Combine all ingredients, simmer appx 3 hours
